Barry Jones qualified in Medicine from the University of London (Charing Cross Hospital Medical School) in 1974. After completing a training in general surgery and becoming a fellow of the Royal College of Surgeons in 1978, he began higher surgical training in plastic surgery. In 1982, he completed a post graduate thesis and was awarded the degree of Master of Surgery at the University of London. He completed the Royal College of Surgeons accreditation process in plastic surgery in 1984 and was appointed Consultant Plastic Surgeon to Great Ormond Street Hospital for Children NHS Trust, and University College Hospital London in March 1985. He has directed the supraregional Craniofacial Unit at Great Ormond Street Hospital for Children NHS Trust since 1987.

Mr Jones was awarded several travelling scholarships during his training period, both to the United States and continental Europe, the most significant of which was a scholarship from the Royal College of Surgeons to train specifically in craniofacial and aesthetic surgery with Dr Daniel Marchac in Paris. During this period, he also spent time with Dr Paul Tessier, the originator of craniofacial surgery.

Mr Jones was appointed Hunterian Professor at the Royal College of Surgeons in 2005.
